Strict specifications to ensure quality

The quality of San Daniele ham was recognised by the Italian government as far back as 1970. The traditional rules according to which it is processed were incorporated into a specific legal provision, making them compulsory by law and introducing penalties for breaches so as to protect the trademark, the quality and the typical properties of the product.

These rules are contained in the Production Specifications and cover every stage of the processing carried out at the ham factories and everyone involved in the whole production chain (farmers, slaughterers and slicing workshops).

Application of these rules is compulsory according to Italian Law and European Union Regulations.
