The Prosciutto di San Daniele Consortium is a private consortium of enterprises established under Art. 2602 et seq. of the Italian Civil Code. It now includes 31 producers.
It was founded in 1961 by all producers at that time, as well as various citizens.
The Consortium is constantly committed to perfecting and improving quality, and provides assistance and professional consulting to member producers. It safeguards the product’s distinctive nature and characteristics, regulates matters of common interest for parties in the production chain, and performs technical and production standard-setting.
The objective is to protect and publicize the Prosciutto di San Daniele name and trademark worldwide.

Protection and Supervision
The Consortium keeps the Production Specifications.
It ensures that they are correctly applied.
It protects and safeguards the trademark in order to ensure that there is no illegitimate use of the trademark or of the “Prosciutto di San Daniele” Protected Designation of Origin (PDO), under an assignment from the Italian Ministry for Agricultural, Food and Forestry Policies.
It carries out activities to promote, improve and publicize Prosciutto di San Daniele in Italy and other countries.

It safeguards distinctive features and characteristics of the product.

The quality of Prosciutto di San Daniele was recognised by Italy as early as 1970: specific provisions incorporated traditional production rules, making them mandatory for everyone in the production chain. The rules are contained in the Production Specifications and regard all phases of production for all parties involved in the production chain. Controls and PDO certification are handled by IFCQ Certificazioni srl, which is appointed by the Italian Ministry for Agricultural, Food, Forestry and Tourism Policies (MIPAAFT).
The Control Institute verifies and certifies proper application of the Production Specifications by all parties in the production chain, as well as the requirements and specific characteristics the product must meet to use the Prosciutto di San Daniele Designation.
Controls are mandatory under Italian law and the regulations of the European Union.
The Production Chain
The Prosciutto di San Daniele production chain is strictly Italian: pig farmers, slaughterhouses, prosciutto factories and workshops where the prosciutto is sliced.
