The production chain of San Daniele is strictly Italian and consists of pig farmers, slaughterhouses, ham factories and workshops where the ham is sliced. The number of farmers recognised for the purpose of the DPO status of San Daniele ham is just over 4000 and they are all in the ten regions of central and northern Italy included in the Specifications (Friuli Venezia Giulia, Veneto, Lombardy, Piedmont, Emilia Romagna, Tuscany, Lazio, Abruzzo, Marche and Umbria). They ensure an overall annual production of about 8.5 million certified pigs. The number of slaughterhouses included in the DPO circuit is about seventy, again all within the ten regions of central and northern Italy indicated in the Specifications. Then there are 31 ham factories and 8 slicing workshops, all situated inside the administrative boundaries of the municipality of San Daniele del Friuli (in the province of Udine), for a production of approximately 2,600,000 hams a year and about 17 million trays of pre-sliced San Daniele ham.
